4 salmon fillets (6 oz each, preferably wild-caught)
2 tablespoons olive oil
3 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
2 tablespoons chopped fresh dill (or 1 tablespoon dried)
Salt and pepper to taste
3 garlic cloves, minced
Optional: 1 teaspoon Dijon mustard

Instructions
1. Pat salmon fillets dry and place skin-side down on a parchment-lined baking sheet.
