Description
A low carb, high protein taco bowl with cauliflower rice, seasoned turkey or tofu, fresh vegetables, and zesty garnishes.
Ingredients
1 bag frozen cauliflower rice
1 lb halal ground turkey or tofu substitute
1 medium onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp cumin
1 tsp smoked paprika
Salt and pepper to taste
Avocado slices
Cilantro
Lime wedges
Instructions
Heat olive oil in a skillet over medium heat.
Sauté onion and bell pepper for 3–4 minutes.
Add ground turkey or tofu, garlic, cumin, paprika, salt, and pepper. Cook until browned, about 7-10 minutes.
Heat cauliflower rice per package instructions.
Layer rice in bowl, then top with turkey (or tofu).
Garnish with avocado, cilantro, and a lime wedge.
Notes
Top with dairy-free cheese or yogurt for a creamy twist.
Use tofu for a vegetarian version.
