Sweet and savory chicken thighs paired with roasted sweet potatoes, quinoa, and steamed broccoli for easy flavor-packed meal prep.
Ingredients
4 boneless, skinless chicken thighs
2 large sweet potatoes, peeled and cubed
1 tbsp olive oil
1/4 cup low-sodium teriyaki sauce
1 tsp garlic powder
1/2 tsp ground black pepper
1 cup steamed broccoli florets
1/2 cup cooked quinoa or brown rice
Sliced green onions
Sesame seeds for garnish
Instructions
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, garlic powder, black pepper. Roast for 25–30 minutes.
Cook chicken thighs in a skillet until golden. Glaze with teriyaki sauce.
Steam broccoli until bright green and tender.
Prepare quinoa according to package directions.
Assemble in containers: Layer quinoa, sweet potatoes, sliced chicken, broccoli.
Top with green onions and sesame seeds if desired.
Notes
Store in airtight containers in the fridge for up to 4 days.
Switch quinoa with couscous or brown rice for variation.
