Ingredients
2 cups rolled oats
1½ cups almond milk
2 tbsp maple syrup
1 tsp baking powder
1 tsp ground cinnamon
½ tsp ground nutmeg
1 egg
¼ cup unsweetened applesauce
1 medium apple, diced
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F and grease a baking pan.
In a bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
Whisk together the almond milk, egg, applesauce, syrup, and vanilla in another bowl.
Combine wet and dry ingredients. Stir in diced apples.
Pour mixture into the pan and smooth the top.
Bake for 30 minutes until golden. Let cool before slicing.
