Description

Ingredients
2 large eggs (preferably pasture-raised)
2–3 tbsp pesto (basil, arugula, or sun-dried tomato)
Optional bread (sourdough, multigrain, or avocado toast)
Salt, pepper, chili flakes, lemon zest to taste
Optional cheese: feta or shaved parmesan
Instructions
1. Heat a nonstick skillet over medium heat.
2. Add 2 tablespoons of pesto to the pan and let it sizzle for 20 seconds.
3. Crack eggs directly into the pesto.
4. Cook for 3-4 minutes until whites are set and yolks remain runny (flip if over-easy is preferred).
5. Serve over toast or grain bowls, garnish with cheese and chili flakes.
Notes
For thick pesto, loosen with olive oil before frying.
Customize with spinach, kale, or sun-dried tomato pesto.
