Description
This simple chicken rice bowl is packed with colorful veggies and bold flavor, ready in just 30 minutes. Perfect for weeknights or meal prep.
Ingredients
1 cup white or brown rice
1 lb chicken breast, cubed
1 bell pepper, sliced
1/2 cup shredded carrots
1 avocado, sliced
1/4 cup pickled onions
2 tbsp olive oil
1 tbsp soy-free tamari
1 tsp honey
1/2 tsp garlic powder
1 tsp sesame oil
Sesame seeds and green onion to garnish
Instructions
Cook 1 cup of rice according to package instructions.
In a skillet, heat sesame oil and cook cubed chicken until browned and fully cooked.
Add bell pepper and shredded carrots, stir-fry for 3 minutes.
Whisk olive oil, tamari, honey, garlic powder; pour over skillet and coat mixture.
Start assembling bowls with cooked rice, chicken and veggie mix.
Top with avocado, pickled onions, sauce, and garnish with sesame seeds and green onion.
Notes
For vegetarian version, replace chicken with tofu cubes.
Great for weekly lunches—just store toppings and sauce separately.
