Ingredients
1 lb breakfast turkey sausage
1/4 cup all-purpose flour
2 1/2 cups whole milk
1 tsp freshly ground black pepper
Salt to taste
Instructions
1. Heat a skillet over medium heat and add the sausage. Break it apart and cook until browned and fully cooked.
2. Sprinkle flour over the sausage and stir constantly to form a roux. Cook for 1-2 minutes to eliminate the raw flour taste.
3. Slowly pour in the milk while stirring. Reduce to medium-low and let simmer until thickened, about 5–7 minutes.
4. Add black pepper and season with salt to taste.
5. Adjust thickness if needed: simmer longer to thicken or add milk to thin. Serve hot over biscuits, toast, or grits.
Notes
For a spicy kick, use jalapeño sausage or add red pepper flakes.
Nutmeg or thyme adds an elegant twist.
