Description
A creamy, garlicky shrimp pasta that brings weeknight comfort and indulgence to the table. Quick to prepare and easy to customize with fresh, flavorful ingredients.
Ingredients
1 pound raw large shrimp (peeled & deveined)
12 oz fettuccine or linguine pasta
1 cup heavy cream (or cashew cream)
4 large garlic cloves (minced)
2 tbsp butter
2 tbsp olive oil
1/2 cup grated Parmesan cheese
1 tbsp fresh lemon juice
Salt, pepper, crushed red pepper (to taste)
Instructions
1. Boil salted water and cook pasta to al dente. Drain and reserve 1/2 cup of pasta water.
2. In a large skillet, heat 1 tbsp olive oil and 1 tbsp butter. Add shrimp seasoned with salt and pepper. Sauté 1–2 minutes each side until pink. Remove.
3. Add remaining oil and butter to skillet. Sauté garlic until golden.
4. Stir in heavy cream and simmer for 5–6 minutes.
5. Blend in Parmesan and pasta water until smooth. Add lemon juice.
6. Return shrimp to the pan, add pasta, and toss until coated.
7. Season to taste. Garnish with parsley and lemon wedge.
Notes
For a fun twist, add garlic croutons for crunch or shredded spinach for extra nutrition.
To store: Refrigerate in an airtight container for up to 3 days. Reheat with a splash of milk or cream.
Avoid freezing cream-based sauces as they may separate.
