A versatile and delightful shrimp salad with a medley of fresh ingredients.
Ingredients
1 pound large shrimp, peeled and deveined
2 cups mixed greens
1 cup cherry tomatoes, halved
1/2 cup red onion, thinly sliced
1/4 cup fresh dill, chopped
1/2 cup cucumber, diced
1 avocado, diced
Salt and pepper to taste
1 lemon, juiced
1/4 cup olive oil
1 tablespoon Dijon mustard
Instructions
Toss shrimp with olive oil, salt, and pepper. Sauté shrimp over medium heat for 2-3 minutes per side until pink and opaque.
Whisk together lemon juice, olive oil, Dijon mustard, salt, and pepper to create the dressing.
Combine greens, tomatoes, onion, cucumber, and avocado in a large bowl. Add shrimp.
Drizzle the dressing over the salad and toss. Garnish with dill and serve.
Notes
Best served fresh but can be made a day ahead.
