Ingredients
2 lbs fresh Roma or cherry tomatoes
1 medium yellow onion, chopped
3 garlic cloves, minced
1/4 cup olive oil
1/2 cup fresh basil leaves
2 cups vegetable broth
1/2 cup heavy cream (optional)
Instructions
1. Preheat oven to 400°F. Halve tomatoes, drizzle with olive oil, season, and roast for 25 minutes.
2. Sauté onions and garlic in a pot until golden.
3. Add roasted tomatoes and vegetable broth. Simmer for 15 minutes.
4. Add basil leaves and blend until smooth.
5. Stir in cream or alternative, blend again.
6. Adjust seasoning with salt, sugar, or balsamic vinegar.
7. Serve hot with olive oil drizzle or sourdough bread.
Notes
Swap cream for coconut cream for a vegan option.
Enhance with a splash of balsamic vinegar or unflavored collagen.
