Ingredients
1 boneless turkey breast roast (around 3–4 lbs)
3 tablespoons olive oil (or melted unsalted butter)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon smoked paprika
1 tablespoon fresh rosemary, finely chopped (dried works too)
1 tablespoon fresh thyme, finely chopped
1 lemon, zested and juiced
3–4 garlic cloves, smashed
1 cup low-sodium chicken broth or vegetable broth (for roasting pan)
Instructions
1. Preheat your oven to 350°F. Set a rack in the center.
2. Pat your turkey roast dry with paper towels. This helps it crisp up.
3. Mix olive oil, salt, pepper, garlic powder, onion powder, paprika, rosemary, thyme, and lemon zest.
4. Rub the mixture generously all over the turkey breast.
