Description
These portable breakfast cups combine sweet potatoes, eggs, peppers, and spices—all crisped to perfection in the air fryer for a nutritious and quick breakfast.
Ingredients
2 medium sweet potatoes, grated
6 large eggs
1/4 cup chopped red bell pepper
1/4 cup chopped onion
1/2 teaspoon smoked paprika
Pinch of sea salt and black pepper
Avocado oil spray
Instructions
Preheat air fryer to 375°F.
Spray silicone muffin molds with avocado oil.
Press grated sweet potato into molds and season.
Air fry sweet potato nests for 5 minutes.
Crack an egg into each mold; add peppers and onions.
Air fry for another 7–9 minutes until eggs are set.
Cool slightly, then remove and serve.
Notes
Customize with spinach, tomatoes, or dairy-free cheese.
Store in fridge for up to 4 days; reheat in air fryer.
