Description
Golden, flaky cod with a crunchy outer layer—made healthier and easier in the air fryer. Ready in under 20 minutes, it’s the perfect weeknight dinner or meal prep protein.
Ingredients
Fresh cod fillets (6 oz per person)
Olive oil spray
Panko breadcrumbs
Garlic powder
Smoked paprika
Salt
Black pepper
Fresh lemon wedges
Instructions
1. Preheat your air fryer to 380°F.
2. Pat cod dry with paper towels.
3. Spray each fillet lightly with olive oil spray.
4. Combine breadcrumbs, paprika, garlic powder, salt, and pepper in a shallow dish.
5. Dredge cod in the mix, pressing lightly to coat.
6. Place fillets in the air fryer basket in a single layer.
7. Spray the tops with a light mist of oil again for extra crisp.
8. Cook for 10–12 minutes. Check at 10 minutes—outside should be golden, inside flaky.
9. Serve with lemon wedges and a side of roasted broccoli.
Notes
Avoid overcooking to keep the cod juicy—check for flakiness at the 10-minute mark.
For thicker fillets, add 1–2 minutes of cook time.
Try variations like Cajun, Tex-Mex, or Mediterranean flavor profiles.
For meal prep, store cooled cod in an airtight container up to 3 days and reheat in the air fryer at 360°F for 4–5 minutes.
