Ingredients
1 medium globe eggplant (or 2 smaller Japanese or Italian eggplants)
2 tbsp olive oil (or avocado oil spray)
1/2 tsp garlic powder (or fresh minced garlic)
Salt and pepper to taste
Optional: Smoked paprika or za’atar
Optional: Breadcrumbs, panko, or crushed almonds for crunch
Optional: Parmesan cheese or tahini for serving
Instructions
1. Wash and dry the eggplant. Optional: salt both sides of slices and let rest for 10 minutes to remove moisture.
2. Slice into ½” thick rounds or cubes.
3. Toss with olive oil, garlic powder, salt, and pepper. Add breadcrumbs for crunch if desired.
4. Preheat air fryer to 380°F.
5. Place slices in a single layer. Air fry for 6 minutes.
6. Flip slices and air fry another 6 minutes until golden and crispy.
7. Cool for 2–3 minutes before serving.
Notes
Don’t skip the salting step—it helps avoid sogginess.
Serve with tahini-lemon sauce, tzatziki, or over hummus bowls.
Pairs well with air fryer broccoli, quinoa, or grilled zucchini noodles.
