Description
Zucchini, carrot, and sweet potato fries cooked to perfection in an air fryer with bold, crispy flavors and minimal oil.
Ingredients
1 large zucchini, sliced into sticks
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan or nutritional yeast
1 egg or flax egg for vegan option
1/2 tsp garlic powder
2 large carrots, sliced into sticks
1 tbsp olive oil
1/2 tsp smoked paprika
1/4 tsp ground cumin
1 large sweet potato, sliced into thin fries
1 tbsp cornstarch
Kosher salt to taste
Instructions
Preheat air fryer to 380°F.
Prepare veggies as directed and mix seasonings in separate bowls.
Dip zucchini into egg, then coat in panko-Parmesan mix.
Toss carrots with olive oil, paprika, and cumin.
Toss sweet potato fries with cornstarch and chili powder.
Place in greased air fryer basket in a single layer.
Cook for 10 minutes, flip, then cook for another 10 minutes until golden and crispy.
Notes
Pat vegetables dry before coating for crisper fries.
Do not overcrowd the air fryer basket—work in batches if needed.
