Ingredients
2 medium zucchinis (cut into fry-sized sticks)
2 large eggs
1 cup panko breadcrumbs (or gluten-free alternative)
½ cup grated parmesan cheese
½ tsp garlic powder
½ tsp paprika
Salt and black pepper to taste
Cooking spray (preferably avocado oil)
Instructions
1. Cut zucchini into fries (½ inch wide, 3–4 inches long). Lightly salt and let sit for 10 minutes, then pat dry.
2. Beat eggs in a shallow bowl.
3. In another bowl, mix panko, parmesan, garlic powder, paprika, salt, and pepper.
4. Dip each zucchini stick in the egg wash, then coat with the breadcrumb mixture.
5. Spray both sides lightly with cooking spray.
6. Place fries in a single layer in the air fryer basket.
7. Cook at 400°F for 8–10 minutes, flipping halfway through.
8. Serve hot with your favorite dip.
