Ingredients
1½ cups almond flour
½ cup all-purpose flour
1 tsp baking powder
3 eggs
¼ tsp salt
¾ cup granulated sugar
½ cup olive oil or avocado oil
1 tsp pure almond extract
Instructions
Preheat your oven to 350°F and line a round cake pan with parchment. Lightly grease the sides.
In a bowl, whisk the eggs with sugar until fluffy. Add oil and almond extract.
In a separate bowl, mix almond flour, all-purpose flour, salt, and baking powder.
Fold the dry ingredients into the wet until evenly combined.
Pour batter into your prepared pan and smooth the top. Tap lightly to remove air bubbles.
Bake for 30–35 minutes or until golden and a toothpick inserted in the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Top with powdered sugar, sliced almonds, or a citrus glaze for extra flavor.
To freeze, wrap in parchment and store in an airtight container.
