Homemade Almond Cookies

Description

Crispy-edged, chewy-centered almond cookies made with almond flour and lightly sweetened with maple syrup. Naturally gluten-free and quick to prepare.


Ingredients

Scale

1¾ cups almond flour

½ cup granulated sugar

¼ teaspoon baking soda

2 tablespoons maple syrup

3 tablespoons light olive oil

1 teaspoon almond extract

Pinch of sea salt

¼ cup chopped almonds (optional)


Instructions

Preheat oven to 350°F and line a baking sheet with parchment paper.

Mix almond flour, sugar, baking soda, and salt in a medium bowl.

Add olive oil, maple syrup, and almond extract. Mix until dough forms.

Stir in chopped almonds, if using.

Scoop 1-inch dough balls and place them 2 inches apart on the sheet.

Flatten gently with the back of a spoon.

Bake for 13–15 minutes until golden on the edges.

Cool 10 minutes before moving to a rack to cool completely.

Notes

Chilling the dough for 20 minutes can improve texture.

Cookies freeze well for up to 3 months.
