Description
A fusion-style appetizer combining Korean kimchi, cheddar cheese, and egg—all wrapped into crisp egg rolls for a spicy, tangy bite-sized snack.
Ingredients
12 egg roll wrappers
1 cup drained kimchi, finely chopped
1 cup shredded cheddar cheese
2 large eggs, scrambled and cooled
2 tablespoons olive oil or cooking spray
Instructions
Scramble the eggs and let them cool slightly.
Mix eggs with chopped kimchi and cheddar cheese in a medium bowl.
Place 1-2 tablespoons of mixture in center of egg roll wrapper, fold edges, and roll tightly.
Brush or spray lightly with oil.
Air fry at 375°F for 11 minutes, flipping halfway through; or bake at 400°F for 15 minutes.
Notes
Serve with whipped feta or chili soy dipping sauce.
Make the filling up to 2 days ahead and refrigerate.
