Description
This creamy apple cheesecake pairs warm cinnamon apples with a rich vanilla cheesecake filling over a crisp graham cracker crust. A cozy twist on a classic.
Ingredients
2 cups crushed graham crackers
1/2 cup unsalted butter, melted
3 bricks (24 oz) cream cheese, room temperature
3/4 cup granulated sugar
3 large eggs, room temperature
2 teaspoons cornstarch
1 teaspoon vanilla powder
2 apples, thinly sliced (Granny Smith or Honeycrisp)
1 tsp ground cinnamon
Pinch of nutmeg
Instructions
Preheat oven to 325°F. Grease a 9” springform pan.
Combine crushed graham crackers with melted butter and press into bottom of pan; bake crust for 8 minutes. Let cool.
Beat cream cheese until smooth. Add sugar, vanilla, and cornstarch and mix until creamy.
Add eggs one at a time, beating on low.
Pour half mixture into crust. Layer with apple slices mixed with cinnamon and nutmeg.
Top with remaining cheesecake filling and smooth the top.
Bake for 55–60 minutes until center is slightly jiggly.
Cool in oven with door ajar. Then chill for at least 3 hours before serving.
Notes
Use room-temperature cream cheese for smoother batter.
Chilling overnight yields best texture.
Granny Smith apples provide the best balance of tartness and structure.
