Ingredients
1 cup butter (softened)
1 1/4 cups brown sugar
2 large eggs
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1 1/2 tsp ground cinnamon
1/4 tsp nutmeg
1 1/2 cups peeled, diced apples
1/2 cup chopped walnuts (optional)
Instructions
Preheat oven to 350°F and line a baking sheet.
Cream butter and sugar until fluffy.
Beat in eggs one at a time.
Mix dry ingredients; combine in the wet mix.
Fold in apples and nuts.
Scoop onto baking sheet and flatten slightly.
Bake for 13 minutes, edges just golden brown.
Cool for 5 minutes before transferring to a rack.
Notes
For softer cookies, avoid overbaking.
Store with bread slice to retain moisture.
Freezes well and revives in 10-second microwave bursts.
