Description
Moist, spiced apple cupcakes made with real apple chunks and topped with creamy cinnamon frosting. Perfect for fall gatherings or cozy snacks.
Ingredients
1½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
½ cup brown sugar
½ cup granulated sugar
1 large egg
1 tsp alcohol-free vanilla extract
½ cup unsweetened applesauce
½ cup vegetable oil
1 cup peeled, diced apples
Instructions
Preheat oven to 350°F and line muffin tin.
Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, mix sugars, egg, applesauce, oil, and vanilla.
Combine wet and dry mixtures. Fold in diced apples.
Spoon batter into liners, filling each ¾ full.
Bake for 20–22 minutes or until toothpick inserted comes out clean.
Cool for 5 minutes in the pan, then transfer to wire rack.
Optionally frost when cupcakes are fully cooled.
Notes
Use firm apple varieties like Granny Smith or Honeycrisp.
Don’t overmix to keep cupcakes light and fluffy.
Cool completely before applying frosting.
