Ingredients

2 cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

½ tsp nutmeg

¼ tsp salt

¾ cup packed brown sugar

2 large eggs

1 cup unsweetened applesauce

¼ cup milk

Oil for frying (e.g. canola)


Instructions

1. Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium bowl.

2. In a separate bowl, beat brown sugar and eggs until fluffy.

3. Mix in applesauce and milk until smooth.

4. Fold dry ingredients into wet until just combined.

5. Heat oil to 350°F in a deep pan.

6. Drop small rounds of batter into the oil using two spoons or a donut dropper.

7. Fry each side for 2–3 minutes until golden.

8. Transfer to paper towels to drain.

9. Optionally toss in cinnamon sugar while warm.

10. Cool slightly and serve with apple butter or maple glaze.

Notes

For a healthier twist, bake in a donut pan at 350°F for 12–14 minutes.

You can also reuse batter with mashed bananas to make muffins.

Serve warm with coffee or cider.

Store in an airtight container for up to 2 days or freeze unglazed for later.
