Ingredients
All-purpose flour 2 cups
Baking powder 2 tsp
Baking soda 1/2 tsp
Cinnamon 1 tsp
Salt 1/2 tsp
Chopped apples (peeled or unpeeled) 1½ cups
Eggs 2 large
Brown sugar 3/4 cup
Milk or buttermilk 1/2 cup
Melted butter or coconut oil 1/3 cup
Vanilla bean 1 tsp
Instructions
1. Preheat your oven to 375°F and line a muffin tin with parchment liners.
2. In a large bowl, whisk together the flour, baking powder, soda, cinnamon, and salt.
3. In another bowl, beat the eggs, brown sugar, milk, vanilla, and melted butter until smooth.
4. Fold the wet into the dry mixture, careful not to overmix—just until combined.
5. Stir in your chopped apples gently.
6. Scoop the batter into muffin cups, filling each about ¾ of the way.
7. Optionally sprinkle a cinnamon-sugar mix or oats on top for texture.
8. Bake for 20–22 minutes, until tops are golden and a toothpick comes out clean.
9. Let cool in the tin for 5 minutes, then transfer to a rack.
Notes
For extra flair, try adding chopped nuts, raisins, or a swirl of maple butter. Chill batter before baking for high-domed muffins. Muffins freeze well—wrap individually for easy grab-and-go.
