Description
A soft, moist quick bread blending tart apples and spiced pumpkin puree into a perfect fall treat.
Ingredients
1 cup canned pumpkin puree
2 apples, diced
2 large eggs
1/2 cup brown sugar
1/4 cup avocado oil
1/4 cup unsweetened applesauce
1 tsp vanilla extract (non-alcoholic)
1 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp salt
Instructions
Preheat oven to 350°F and prepare loaf pan.
In large bowl, whisk pumpkin, eggs, brown sugar, oil, applesauce, and vanilla until smooth.
In another bowl, combine flour, baking soda, baking powder, spices, and salt.
Fold dry ingredients into wet until just combined.
Stir in diced apples gently.
Pour into prepared pan and smooth top.
Bake for 55 minutes or until toothpick comes out clean.
Cool for 10 minutes before slicing.
Notes
Use Granny Smith apples for a slightly tart finish.
Store leftovers in airtight container for up to 5 days or freeze for 3 months.
