Ingredients

1 cup raw walnuts (toasted)

1 tsp Dijon mustard

Salt and pepper to taste


Instructions

1. Toast the walnuts in a dry skillet over medium heat, shaking frequently, for 4–5 minutes until aromatic.

2. Core and thinly slice the apples, or cube them if preferred.

3. In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.

4. In a large bowl, combine mixed greens, apples, cranberries, feta, and walnuts.

5. Drizzle the vinaigrette over the salad while tossing gently to coat evenly.

6. Serve immediately or chill for 5 minutes before serving.

Notes

For protein, add grilled chicken or lentils.

Swap cranberries with pomegranate seeds or dried figs based on the season.
