Ingredients
1 jar marinated artichoke hearts
4 cups mixed greens
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1 medium cucumber, thinly sliced
1 red bell pepper, diced
1/2 cup olives, pitted
1/2 cup feta cheese, crumbled
Your choice of salad dressing (lemon vinaigrette suggested)
Instructions
Rinse the mixed greens and set aside to dry.
In a large bowl, combine cherry tomatoes, red onions, cucumber, red bell pepper, and olives.
Drain and halve the marinated artichoke hearts, adding them to the vegetable mixture.
Sprinkle crumbled feta cheese on top.
Drizzle your chosen dressing over the ingredients.
Gently toss all ingredients to combine.
Serve immediately.
