Description

A delicious, creamy avocado soup that’s both nutritious and easy to prepare.


Ingredients

3 ripe avocados, peeled and pitted

3 cups chicken or vegetable broth

1 small onion, finely chopped

2 garlic cloves, minced

1 tablespoon lime juice

1/2 cup fresh cilantro, chopped

Salt and freshly ground black pepper to taste


Instructions

In a large pot over medium heat, sauté onions in a splash of olive oil until translucent.

Add minced garlic and continue to sauté for another minute.

Pour in your choice of chicken or vegetable broth, letting it heat through.

Introduce avocado chunks to the pot, stirring until well coated.

Allow the mixture to simmer gently for about 10 minutes.

Use an immersion blender to purée the ingredients until smooth.

Stir in lime juice and chopped cilantro, then season with salt and pepper to taste.

Ladle into bowls and garnish with optional toppings.

Notes

Feel free to substitute cilantro with basil or parsley to suit your taste.

For additional texture, consider garnishing with diced tomatoes or jalapeños.
