A flavorful and easy baked chicken thighs recipe with olive oil, paprika, lemon, and herbs. Juicy inside with crispy skin, ideal for weeknight dinners.
Ingredients
4 bone-in, skin-on chicken thighs
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp ground black pepper
1 tsp kosher salt
1 tsp dried thyme
Juice of half a lemon
1 tbsp Dijon mustard (optional)
1 tsp honey (optional)
2 garlic cloves, minced
Fresh parsley (for garnish)
Instructions
Preheat oven to 400°F (200°C) and position the rack in the center.
Pat chicken dry with paper towels.
In a bowl, mix olive oil, paprika, thyme, garlic powder, salt, and lemon juice. Add optional mustard and honey.
Rub marinade all over chicken, including under the skin.
Place chicken on a wire rack over a baking sheet or in a baking dish.
Bake for 40 to 45 minutes until skin is crisp and internal temp reaches 165°F.
Let rest for 5 minutes, then garnish with chopped parsley.
Notes
For extra crispy skin, broil the last 3 minutes of baking.
Swap thighs for breasts and reduce bake time to 25 minutes.
