Ingredients
2 cups mashed ripe bananas (4 bananas)
2½ cups all-purpose flour
1 tsp baking soda
½ tsp baking powder
½ tsp salt
½ tsp ground cinnamon
1 cup granulated sugar
½ cup brown sugar
½ cup neutral oil
½ cup plain yogurt
3 large eggs
1 tbsp lemon juice
1 tbsp vanilla extract
Instructions
Preheat oven to 350°F and prepare cake pans.
Whisk bananas, oil, yogurt, eggs, vanilla, and lemon juice.
Mix dry ingredients in a separate bowl.
Combine wet and dry ingredients gently.
Fold in optional mix-ins like nuts or chocolate chips.
Pour into pans, bake 35–40 minutes.
Cool completely before frosting.
Notes
Use very ripe bananas for best flavor.
Don’t overmix batter; it makes the texture dense.
Freeze unfrosted layers for up to 2 months.
