Ingredients
3 very ripe bananas, mashed
2 large eggs
1/2 cup vegetable oil
1/2 cup brown sugar or maple syrup
1 tsp vanilla extract (alcohol-free)
1 tsp baking soda
1.5 cups all-purpose flour
1/2 tsp cinnamon (optional)
1/4 tsp salt
Optional: 1/2 cup chocolate chips or chopped walnuts
Instructions
Preheat oven to 350°F (175°C); grease or line a muffin tin.
Mash bananas in a large mixing bowl.
Whisk in eggs, oil, sugar, and vanilla.
In a separate bowl, mix flour, baking soda, cinnamon, and salt.
Gently combine wet and dry ingredients until just mixed.
Fold in any optional add-ins like nuts or chocolate.
Fill muffin cups 3/4 full, bake for 20–22 minutes.
Cool in pan for 5 minutes before transferring to wire rack.
Notes
Do not overmix the batter to keep muffins light.
Store with a slice of bread in the container to maintain moisture.
Freeze individually wrapped for up to 2 months.
