Description

These refreshing blueberry bars are layered with a buttery oat crust, tangy berries, and a golden crumble topping. Perfect for snacking, gifting, or dessert trays, they’re easy to prep and freeze beautifully.


Ingredients

2 cups fresh or thawed blueberries

1 tablespoon lemon juice + zest

¾ cup granulated sugar

1½ cups all-purpose flour

½ cup rolled oats

½ tsp baking powder

½ cup unsalted butter

½ tsp optional cinnamon


Instructions

Preheat oven to 350°F. Line or grease an 8×8 baking dish.

Mix flour, oats, sugar, and baking powder. Cut in butter until crumbly.

Reserve ¾ cup mixture; pat the rest into the pan and bake for 10 minutes.

Toss blueberries with lemon juice and a tablespoon of sugar.

Spread blueberries over the crust, sprinkle reserved crumble on top.

Bake 30 minutes until golden and bubbly.

Cool completely before slicing; refrigerate if firmer texture is preferred.

Notes

Use cornstarch to thicken excess moisture if using overly juicy berries.

Bars slice best after chilling for at least 30 minutes.

Freezes well for two months when layered with parchment.
