Ingredients
1 ¾ cups all-purpose flour
2/3 cup granulated sugar
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
¾ cup plain yogurt (or dairy-free alternative)
2 eggs
1/3 cup light olive oil
1 tsp pure vanilla
1 tsp lemon zest
1 cup fresh or frozen blueberries
1 cup powdered sugar (for glaze)
2 tbsp milk or oat milk
1 tsp lemon juice
Instructions
Preheat oven to 350°F and grease or line donut pan.
Mix flour, sugar, baking powder, baking soda, and salt in a bowl.
Whisk together eggs, yogurt, oil, vanilla, and zest in another bowl.
Blend wet ingredients into dry until just mixed.
Fold in blueberries gently.
Pipe or spoon batter into donut cavities, filling ¾ of the way.
Bake 16–18 minutes until just golden.
Cool for 5 minutes in pan then transfer to rack.
Whisk powdered sugar, milk, and lemon juice for glaze and drizzle over cooled donuts.
Notes
Use frozen blueberries without thawing to prevent color bleed.
Add lemon or vanilla variations to match your flavor preferences.
