Description
Fluffy, high-protein cloud bread made with cottage cheese and sweet blueberries. Light, easy, and low-carb.
Ingredients
3 large eggs, separated
½ cup full-fat cottage cheese, blended
¼ teaspoon cream of tartar
1½ tablespoons maple syrup (or substitute)
½ teaspoon vanilla bean
½ cup fresh or frozen blueberries
Instructions
1. Preheat oven to 300°F and line a baking sheet.
2. Separate eggs and blend yolks with cottage cheese, vanilla, and syrup.
3. Whip egg whites with cream of tartar until stiff peaks form.
4. Gently fold yolk mixture into whipped whites.
5. Fold in blueberries and scoop onto baking sheet.
6. Bake 25–30 minutes until golden and puffy.
Notes
Use parchment to prevent sticking.
Gently reheat in toaster oven for best texture.
Great with almond butter or cream cheese.
