Ingredients

2 cups all-purpose flour

2 tsp baking powder

1/2 tsp salt

2 large eggs

3/4 cup sugar

1/2 cup olive oil

3/4 cup unsweetened oat milk

1 tsp alcohol-free vanilla extract

1 1/2 cups fresh or frozen blueberries


Instructions

Preheat oven to 375°F and line muffin tray.

Mix flour, baking powder, and salt in a large bowl.

In a separate bowl, whisk sugar, eggs, oil, milk, and vanilla.

Combine wet and dry ingredients until just mixed.

Toss blueberries in flour and fold into the batter.

Scoop batter into tray and bake 22–25 minutes.

Cool for 5 minutes in tray, then move to cooling rack.

Notes

Do not thaw frozen blueberries; fold them in frozen.

For bakery-style tops, sprinkle raw sugar before baking.

Use silicone muffin liners for easy release.
