This easy blueberry tart recipe mixes the charm of Southern tradition with modern simplicity. Made with fresh or frozen berries, it’s quick, sweet, and filled with flavor.
Ingredients
2 cups fresh or frozen blueberries
1/2 cup granulated sugar
2 tbsp cornstarch
1 tbsp lemon juice
1 tsp halal vanilla extract
1 9-inch ready-made tart crust
Instructions
Preheat oven to 375°F (190°C).
In a bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla. Stir well.
Let the mixture sit for 10 minutes.
Press tart crust into 9-inch tart pan.
Pour blueberry mixture into crust and spread evenly.
Place tart on baking sheet, then bake for 30 minutes or until bubbly and golden.
Cool for 15 minutes before slicing and serving.
Notes
Substitute coconut sugar for lower glycemic index.
Fruit filling will set more as it cools.
