Ingredients
Flank steak, thinly sliced across the grain
Broccoli florets
Oyster sauce
Dark soy sauce
Garlic, minced
Ginger, minced
Cornstarch
Neutral oil
Water
Sugar
Toasted sesame oil (optional)
Chili oil (optional)
Instructions
1. Toss beef with 1 tbsp soy sauce, 1/2 tbsp cornstarch, and 1 tbsp oil. Let marinate for 10 minutes.
2. Mix sauce: 2 tbsp dark soy, 1 tbsp oyster sauce, 1 tbsp water, 1/2 tsp sugar, dash of sesame oil.
3. Heat 1 tbsp oil in a hot wok. Sear beef in a single layer for 2 mins, flip, cook 1 more min. Remove.
4. Add 1/2 tbsp oil. Stir-fry broccoli, garlic, and ginger for 2–3 mins until fragrant.
5. Return beef to wok. Add sauce and toss everything for 1–2 mins until glossy.
6. Serve over jasmine rice or noodles.
Notes
Velveting the beef with soy sauce, cornstarch, and oil ensures a tender texture.
Slice beef thin and against the grain for best results.
Freeze beef for 15 mins before slicing for easier handling.
Use frozen broccoli if fresh isn’t available—just blanch it first.
Store leftovers separately from rice or noodles for better texture when reheating.
