Ingredients
2 tbsp butter
1 small onion, diced
2 garlic cloves, minced
1/4 cup all-purpose flour
2 cups whole milk
1 cup vegetable broth
2 cups chopped broccoli (fresh or frozen)
1 ½ cups shredded sharp cheddar cheese
Optional: dash of nutmeg or Dijon mustard for depth
Instructions
1. Melt butter in a large pot over medium heat. Add onions and sauté for 4 minutes.
2. Add garlic and cook until fragrant.
3. Whisk in flour to form a roux, about 2 minutes.
4. Gradually whisk in milk, then add broth and stir.
5. Add broccoli and simmer (10 minutes for fresh, 7–8 for frozen).
6. Reduce heat, stir in cheddar until melted.
7. Season with salt, pepper, and optional nutmeg.
8. Blend partially for a smoother texture or leave chunky.
9. Serve hot with crusty bread or garlic knots.
