Description
Chewy, poppable brownie bites with a Southern twist—made with rich cocoa, a hint of espresso, and gooey centers that never dry out. Perfect for parties, potlucks, or solo snacking.
Ingredients
1/2 cup unsalted butter (melted)
3/4 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1 tsp vanilla bean
3/4 cup all-purpose flour
1/3 cup unsweetened cocoa powder (Dutch-processed preferred)
1/2 tsp espresso powder (optional)
1/4 tsp salt
1/2 cup chocolate chips or semisweet chunks
Instructions
1. Preheat oven to 350°F. Grease a mini muffin tin.
2. Mix melted butter, granulated sugar, and brown sugar in a large bowl until glossy.
3. Add eggs and vanilla. Whisk until smooth.
4. In a separate bowl, sift together flour, cocoa powder, espresso powder, and salt.
5. Gradually stir dry ingredients into wet mixture. Don’t overmix.
6. Fold in chocolate chips or other add-ins.
7. Spoon batter into the muffin tin, filling each cavity 3/4 full.
8. Bake for 12–15 minutes. Tops should be cracked, toothpick should come out with moist crumbs.
9. Cool in the pan for 5 minutes, then remove gently.
10. Optional: drizzle with melted chocolate or dust with powdered sugar.
Notes
Swap almond flour for a gluten-free version.
Use a scoop of protein powder and reduce flour for protein brownie bites.
Brownie bites freeze beautifully for up to 2 months—microwave 10 seconds to serve.
Don’t overbake! Moist crumbs on a toothpick means they’re done.
