Description
A warm, comforting French toast bake featuring brioche cubes soaked in a vanilla almond milk custard—perfect for make-ahead brunches.
Ingredients
1 loaf of brioche bread, cubed
6 large eggs or vegan substitute
2½ cups almond milk
½ cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
1 tbsp vanilla extract (alcohol-free)
⅛ tsp salt
Optional toppings: maple syrup, berries, walnuts
Instructions
Grease a 9×13 dish or line with parchment paper.
Scatter cubed brioche evenly in the dish.
In a bowl, whisk together milk, eggs, sugar, cinnamon, nutmeg, vanilla, and salt.
Pour mixture evenly over bread and press cubes lightly.
Refrigerate overnight if desired, or cover and rest 10 minutes.
Bake at 350°F for 40–45 minutes.
Cool slightly and serve with toppings.
Notes
Bread can be swapped with challah or French loaf.
Great for prepping the night before gathering.
