Ingredients
8 oz egg noodles (or any pasta)
4 tablespoons unsalted butter
Salt (to taste)
Optional: parsley, Parmesan, lemon zest
Instructions
1. Boil water in a large pot and salt it generously.
2. Cook noodles until al dente, typically 8 minutes.
3. Drain the pasta but reserve 1/3 cup of pasta water.
4. Immediately return the noodles to the pot or a warm saucepan.
5. Add butter and swirl it with the noodles to melt and coat.
6. Add a splash of reserved pasta water if needed for silkiness.
7. Season with salt, add black pepper or herbs, and serve hot.
Notes
Optional pairings: baked chicken, seared shrimp, poached egg, sautéed mushrooms.
To add nutrition: mix in spinach, chickpeas, or nutritional yeast.
Reheat with a splash of water or a bit of butter.
