Description

These chewy, rich caramel bars feature a golden oat crust, a thick coconut caramel center, and a topping of dark chocolate chips. Perfect for gatherings or a sweet everyday treat.


Ingredients

1 1/2 cups old-fashioned oats

1 1/2 cups all-purpose flour

1 14-oz can coconut condensed milk

3/4 cup brown sugar

3/4 cup unsalted butter or plant-based butter (melted)

1 tsp non-alcoholic vanilla extract

1/2 tsp sea salt

1 cup dark chocolate chips


Instructions

Preheat oven to 350°F and line a 9×13 inch baking pan with parchment.

Mix oats, flour, melted butter, brown sugar, and sea salt until crumbly.

Press two-thirds of the mixture into the baking pan to form an even bottom layer.

In a saucepan over medium heat, combine coconut condensed milk and vanilla extract. Stir constantly until the mixture thickens into caramel (about 8–10 minutes).

Pour the caramel evenly over the crust.

Top with chocolate chips and the remaining crumbly mixture.

Bake for 25 minutes, or until the top is golden brown.

Cool for at least 30 minutes before slicing. For best results, refrigerate for one hour.

Notes

Store in an airtight container in the fridge for up to 7 days.

For clean slices, cool for an hour before cutting.

Freeze for up to 3 months with parchment between layers.
