A light but creamy tuna noodle casserole packed with vegetables and Greek yogurt. Perfect for quick dinners or make-ahead freezer meals.
Ingredients
2 cups cooked egg noodles
1 can tuna in water, drained
1 cup thawed peas and carrots
1/2 cup Greek yogurt
1 tsp garlic powder
1/2 cup shredded mozzarella cheese
Instructions
Preheat oven to 375°F and grease your baking dish.
In a bowl, mix the noodles, tuna, veggies, yogurt, and garlic powder evenly.
Spread mix into casserole dish and top with cheese.
Bake uncovered for 25 minutes until bubbly and golden.
Let rest 5 minutes before serving.
Notes
Substitute Greek yogurt for sour cream if preferred.
Optionally top with fresh parsley after baking for color.
