A healthy breakfast casserole packed with sweet potato, veggies, and eggs. Perfect for meal prep or feeding a crowd.
Ingredients
2 cups shredded sweet potato
1 tablespoon olive oil
1 cup chopped bell pepper
1/2 cup chopped onion
8 large eggs
1/4 cup unsweetened almond milk
2/3 cup shredded cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F and grease the casserole dish.
Sauté onion and bell peppers in olive oil until soft.
Layer sweet potatoes in the bottom of the dish.
Add sautéed vegetables on top.
In a bowl, whisk eggs, almond milk, cheese, garlic powder, salt, and pepper.
Pour mixture over the layered base.
Bake uncovered for 30 minutes or until eggs are fully set.
Let it cool for 5 minutes, then serve warm.
Notes
Swap cheese for dairy-free to make it fully plant-based.
Freezes beautifully for up to three months.
