A healthy and innovative twist on traditional pasta, featuring roasted cauliflower and a light lemon-parmesan sauce.
Ingredients
1 head of cauliflower, chopped into small florets
8 oz pasta
2 cloves garlic, minced
1/4 cup olive oil
1/4 cup grated parmesan cheese
Juice of one lemon
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Bring a large pot of salted water to boil and cook the pasta until al dente.
In a large skillet, heat olive oil over medium heat, add cauliflower and garlic, sauté for 10 minutes.
Drain the pasta and add it to the skillet with parmesan cheese, lemon juice, salt, and pepper. Mix well.
Transfer to a serving dish, garnish with parsley, and serve.
Notes
The dish can be made vegan by using vegan cheese.
