Ingredients
1 medium head of cauliflower, chopped
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/4 cup black olives, sliced
1/4 cup feta cheese, crumbled
2 tablespoons parsley, chopped
Salt and pepper to taste
Olive oil
Lemon juice
Instructions
Steam cauliflower until tender but crisp.
In a large bowl, combine cauliflower, tomatoes, cucumber, onion, and olives.
Add feta and parsley.
Drizzle olive oil, squeeze lemon, and season with salt and pepper.
Toss to combine.
