Ingredients
1 large head of cauliflower, cut into florets
2 tablespoons olive oil
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper to taste
Corn or flour tortillas
Optional: Cilantro, lime wedges, avocado slices, and your choice of cheese for toppings
Instructions
Preheat the oven to 425°F (about 218°C).
In a large bowl, mix cauliflower with olive oil, chili powder, cumin, salt, and pepper.
Spread on a baking sheet; roast for 25 minutes until crispy.
Warm tortillas; fill with roasted cauliflower.
Top with cilantro, avocado, and a squeeze of lime.
