Ingredients
2 cups cooked rice (day-old rice works best)
1 cup cooked shredded chicken (or tofu, ground turkey)
2 tablespoons soy sauce
1 tablespoon sesame oil
2 eggs, beaten
1 cup frozen mixed vegetables
1 tsp garlic powder
1⁄2 tsp crushed red pepper flakes (adjust to taste)
2 green onions, chopped
Salt and pepper to taste
Instructions
1. Heat sesame oil in a large nonstick skillet. Toss in frozen veggies and sauté until tender.
2. Add the shredded chicken and toss with garlic powder, red pepper flakes, and soy sauce.
3. Push the mixture to one side of the pan. Pour in beaten eggs and scramble on the other side. Combine with chicken/veggie mix.
4. Add rice. Stir thoroughly. Let the rice sit untouched for 1–2 minutes to crisp up.
5. Taste and season with salt and pepper. Garnish with green onions.
Notes
Substitute chicken with rotisserie leftovers, or tofu for a vegetarian twist.
Use coconut aminos instead of soy sauce for a low-sodium version.
