A comforting, creamy chicken casserole filled with cheese, spinach, and tender halal chicken—all baked to golden perfection.
Ingredients
2 cups shredded cooked halal chicken
2 tablespoons olive oil
1 yellow onion, diced
3 garlic cloves, minced
10 oz fresh spinach
1⅓ cups sour cream
½ cup cream cheese
¾ cup shredded sharp cheddar cheese
¼ cup grated Parmesan
1 tsp smoked paprika
½ tsp ground black pepper
Salt to taste
2 cups cooked penne pasta
½ cup panko breadcrumbs
1 tbsp olive oil
Instructions
Preheat oven to 375°F.
Heat olive oil in skillet and sauté onions until translucent.
Add garlic and spinach; cook until wilted.
Stir in sour cream, cream cheese, paprika, salt, pepper.
Fold in chicken and pasta; combine well.
Transfer to greased 9×13 dish. Top with cheddar, Parmesan, and breadcrumbs.
Drizzle olive oil over top and bake 25-30 minutes until golden.
Notes
Use frozen spinach only if well-drained.
Let sit 10 minutes before serving for best texture.
Excellent for meal-prep or freezing.
