Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 carrots, sliced
2 celery stalks, chopped
3 garlic cloves, minced
8 cups chicken stock
2 cups shredded rotisserie chicken
2 cups wide egg noodles
Salt, black pepper, thyme, bay leaf
Optional: dill, lemon zest, cayenne, soy sauce, parmesan rind
Instructions
1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté for 7 minutes until softened.
2. Add minced garlic and cook for another 1-2 minutes until fragrant.
3. Pour in chicken stock, then add thyme, bay leaf, salt, and pepper. Bring to a gentle boil.
4. Add shredded chicken and simmer gently to absorb flavors.
5. Add noodles and cook until just tender. For leftovers, cook noodles separately.
6. Taste and adjust seasoning—add lemon juice, dill, or cayenne for brightness or heat.
7. Ladle hot soup into bowls, garnish with fresh herbs, and serve.
Notes
Toast noodles before adding for a nutty depth.
Use soy sauce or parmesan rind for added umami.
Great with garlic knots or grilled cheese.
Leftovers make a great casserole—just pour over dry pasta and bake with cheese.
